Haya sushi, the ancestor of modern sushi, was invented during the 18th century.
With haya sushi, the rice is mixed with vinegar and salt. In the 18th century a great variety of sushi was invented after haya sushi including boxed sushi, rolled sushi and more.
Boxed sushi was particularly popular in Edo (Tokyo) before nigiri sushi was created.
