A course of all five zones!
The Room of Time and the Water Theater are accompanied by a guide!

This course visits all five zones from the Room of Earth all the way to The Park of Light.
The Room of Time and Water Theater guided course begins 30 minutes after the reservation time (guidance duration: 50 minutes).
This course is highly recommended for visitors who wish to trace the history of Mizkan's transformation and challenges!

By seeing how vinegar was made in the Edo period and how it is brewed today, visitors can experience the spirit of monozukuri that has been passed down from generation to generation.
In the experience corner, visitors can enjoy informative attractions that present the wisdom and ingenuity of Edo period craftsmen and Mizkan's commitment to vinegar production.

    Room of Earth 1

    By seeing how vinegar was made in the Edo period and how it is brewed today, visitors can experience the spirit of monozukuri that has been passed down from generation to generation.

  • Static fermentation chamber

    Static fermentation chamber

    Take a look at the traditional static fermentation method that has continued since the Edo period.
    When sake is poured into a square pail and acetic acid bacteria are added, the bacteria gather on the surface in search of the air necessary for fermentation, and form a thin film while fermenting over two weeks.

    Visitors can view exhibits on the people who worked in the brewery, as well as the tools used to make buckets and barrels.
    Also available is the “Together with the Community” exhibit that unravels the historical connections between Mizkan and Handa.

    Here at the Souzou Factory, let’s look for ingredients that are likely to be thrown away and create the “food of the future!”

    Let’s deliver the “food of the future” created in the Souzou Factory to the future world! And, let’s see how the factory experience impacts the future! There is also a commemorative photo op in front of the future world.

    A group of up to four people can enjoy a quiz led by the Food Doctor.
    Choose one from Osu (vinegar) Course, Sushi Course, and Nabe Course. High scorers may be conferred an honorary title from the Doctor!

  • Ajipon Studio

    Ajipon Studio

    Buy a bottle of Ajipon (200 yen per bottle) from the vending machine in the studio, scan the QR code on the Ajipon bottle with a QR code reader, and take a photo to create an Ajipon label with your face on it. Stick it on the bottle to create your own customized Ajipon bottle!

A gallery of memories and reminders of Handa, where Mizkan was born and nurtured.
Overlooking the canal that has remained unchanged since ancient times, visitors can feel the scenery and people of Handa throughout the history of Mizkan through the nostalgic photos and sound productions.

    Handa is famous for its Float Festival, where 31 teams from the 10 districts in Handa each own a float. Displayed here are noren curtains based on the designs of happi coats of those 31 teams.

    This gallery exhibits Handa scenery from the Meiji era to the early Showa era. Here, visitors can get a glimpse of the townscape of Handa and the lives of its people, showing different expressions in each era and location.

Join us in tracing the history of Mizkan's transformation and challenges over more than 200 years.
This is a modern reproduction of the approximately 20-meter-long Bezaisen that was used during the Edo period. From aboard the ship, the large screen will take the visitors on a voyage to transport vinegar from Handa to Edo.

    Enjoy this informative exhibit on the social background and the symbolic activities of Mizkan of each era along with historical materials.

    We have revived the Bezaisen, a symbol of Mizkan's transformation and challenges, in this modern era.
    Together with a making-of movie of the Bezaisen, please also take a look at the records and drawings researched in the restoration process and the ship blueprints used for reference.
